Before operating the following items must be corrected: - When the ice machine is installed there must be an air-gap placed between its drainage line and the sewage line it conveys into. - A hook shall be available to hang the mop up between uses. - Base coving shall be installed in the rear storage room and front food preparation area. - Food and equipment storage racks shall be at least 6” off of the ground. - The drainage line of the ice well must be above the sewage line creating an air-gap; the drainage line is not permitted to be submerged into the sewage line. - The floor throughout the facility shall be sealed so that it can be effectively cleaned. - The light fixtures above the food preparation area shall be sealed so that it is smooth, non-absorbent, and easily cleanable. - The wooden crates underneath of the pop ice well shall be repaired so that the surface is smooth, durable, non-absorbent, and easily cleanable. - The household toaster and microwave shall be replaced with commercially rated equipment. - A hand sink shall be installed in the front food-preparation area near the 3-compartment sink. The hand sink shall provide hot water (100 F or greater). Please have soap and paper towels available as well. - A covered trash receptacle shall be provided inside of the restroom. - An employee in the facility must take and pass a level-1 food safety course. - The 3-compartment sink shall be spaced from the wall to allow for proper cleaning.
