Stopped by Spanky's on E. Livingston to ensure that there was no smoking taking place in the parking lot. The owner of Spanky's is the same owner of Fiesta Paradise. Got the owner to let me enter Fiesta Paradise to inspect. Facility is currently under construction and is not operational.
No Violations at time of inspection

Fiesta Paradise at 6068 Channingway BLVD is undergoing a managerial change. The owner is still maintaining ownership of the facility and the food service license. Consultation to assure that the kitchen was up to code.
-All coolers working and holding at 41F or below except one prep top cooler which needs to be recharged with coolant.
-Large crack in the wall in the kitchen office that needs to be sealed to prevent pest intrusion.
-ANSI system needs to be checked to assure that it is still functional.
-Grease trap needs to be checked.
-Air gap on the ice machine needs to be adjusted slightly so the gap is twice the diameter of the drain line.
