Cross-contamination of Raw/cooked foods/Other Raw shell eggs observed stored above cooked foods. Store raw product below ready to eat food to prevent contamination. The manager moved the eggs to below the cooked foods.
Approved Systems (HACCP Plans/Time as Public Health Control) Observed cooked beef in the reach in cooler without a use by date. The owner stated that he cooked the meat 2 days ago. Left overs and open containers of hazardous foods shall be date marked no more that 7 days out if held for more than 24 hours. The owner dated the food.
Thermometers Provided/Accurate/Properly Calibrated (2C) Provide a thin tip thermometer to take internal temperatures of food when cooked and reheated to ensure proper cooking temperatures are met. A thermometer was not present.
