Water Supply - Approved Source/Sufficient Capacity/Hot and Cold Under Pressure "Observed at the time of the inspection the mobile unit did not have hot or cold running water due to an empty potable water tank. Mobile unit should hove hot and cold water for proper hand washing, cooking, and ware washing. The mobile push cart unit was parked Joe V's an approved HCPHES establishment. Joe V's approved the use of the water to fill the tank on the mobile unit, and it was observed that there was no water flow from the hand wash and 2 compartment sinks. The mobile push cart volunteered closed until repairs made on the plumbing system-violation corrected on site."
Manager Demonstration of Knowledge/Certified Manager Observed at the time of the inspection there was not a certified food manger on duty. A certified food manger should be on duty at all times.
"Approved Sewage/Wastewater Disposal System, Proper Disposal" Observed at the time of the inspection the person in charge was not able to provide a valid commissary receipt. The mobile unit must be taken to the commissary 24 ho0urs prior to opening for business.
Thermometers Provided/Accurate/Properly Calibrated (2C) "Observed that the mobile unit did not have a small diameter food probe thermometer or an ambient temperature thermometer in the small reach in cooler. Obtain a small diameter food probe thermometer in order to check food temps for hot holding, reheating, cold holding and cooking. Obtain an ambient temperature thermometer to ensure temperature in the reach cooler in holding food at 41 degree F or below. "
