Cold Hold (41 F/45F) "Potentially hazardous foods must be held at 41F or below; observed cut melon in front prep cooler at 50F. Melon was date marked 7/28/14 and chef stated that melon was cut yesterday morning. Informed chef that melon is potentially hazardous one it has been cut and must be held at 41F or below. 2 small containers of cut honeydew melon and a small container of cantaloupe were discarded. Other items held in cooler were non-PHF (lettuce, berries, whole tomatoes, and other fruit). Thermostat on cooler was adjusted and ambient temperature reached 37F"
