Proper Handling of Ready to Eat Foods "Food employees may not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. Observed employee come in contact with taco shell with his bare hands upon my arrival into establishment. Employee discarded items/taco shell once he realized inspector on site.*****Bare hand contact with ready-to-eat foods is strongly discouraged. Foodborne illness organisms are frequently spread to food because of poor or non-existent hand washing procedures.Foodborne illnesses can be prevented by properly storing, cooking, cleaning, and handling foods."
