Observed undated opened packages of cheese over 24 hours and less than 7 days old. The cheese was date labeled and violation corrected on site."
Thermometers Provided/Accurate/Properly Calibrated (2C) "Provide a food probe thermometer to measure the internal temperatures of cooked, and hot and cold held foods to ensure safe food temperatures (see food temperature handout). Observed no food probe thermometer available and the owner will obtain a thermometer today."
