Hot Hold (135F) Observed beans in the hot holding unit holding at 125 F. It was determined that boiling water is not used when preparing the powdered beans. Reheat all food to at least 165 F before placing it into the hot holding unit.
Thermometers Provided/Accurate/Properly Calibrated (2C) Provide a thin tip thermometer to take accurate temperatures of thin products like patties. Thermometers present shall be calibrated properly. Observed on calibrated at 60 F.
Labeling "Labels including name, weight, ingredients and address shall be present on the pre-packaged, self service items such as salads and fruit in the clear clam shell containers. Contact Harris County Health department @ 713-274-6300 (pre-planning) department for a possible variance."
