3-501.16 Maintain potentially hazardous food at 41 F or below. Turkey, Ham and Chicken at 58-65F in make line reach in cooler. Voluntarily discarded. Discontinue use of reach in cooler until repaired and verified by JCDH. Risk Control Plan initiated.
4-602.13 Clean non food contact surfaces as often as necessary to prevent accumulation of residue. Take measures to remove dirty build up from white bulk sugar container.
4-202.16 Replace damaged door on cooler door. Small reach in cooler door broken not working properly. Take measure to repair so that it may operate properly.
