Violation descriptions and comments

3-304.11 Prevent the contact of food with non-food contact surfaces, or, with food contact surfaces that are not properly cleaned and sanitized. Cutting boards have black build up. Interior surface of dish machine has dirty build up.
Interior of ice cream freezer had spillage. Ice cream container was below spillage without protection. Ice cream was discarded and equipment was cleaned.
JCDH 3.2.2 Management allows secondhand smoke in the food establishment.
3-501.15 Cease wrapping or covering food until cooled. Chicken wings cooked wrapped in make line cooler at 48F at top level. Do not wrap chicken wings until they completely cooler. Do not overload reach in cooler keep food items below load limit line.

7-102.11 Label all toxic items not in original containers with the common name of the product. Two Bottles of chemicals labeled sanitizer did not test positive for sanitizer. Had a smell of citrus.
4-202.16 Repair or replace drawers on reach in coolers. Reach in cooler drawers not opening and closing properly.
3-304.14 Change the sanitizing solution for wiping cloths when visibly soiled. Sanitizer solution in red containers was soiled. 3-304.14 Store wet wiping cloths for sanitizing in 50 to 100 ppm chlorine. Sanitizer solution tested negative.

3-501.16(A)(2) Maintain PHF at 41 F or below. PHF in cold holding unit > 41 F due to faulty equipment. Cease use of equipment until repaired and verified by JCDH. Raw hamburger meat, sauteed onions, sliced steak, sandwich meats: turkey, ham and sliced cheeses at 69-78F in reach in drawer cooler below grill. Reach in cooler is not working properly. Discontinue use until repaired and verified by JCDH employee.
3-307.11 Cover all food in storage. Flour and other ingredients stored uncovered.
3-304.12 Store scoops left in potentially hazardous food with handles above the top of the food and the container. Several dressings and toppings had clear portion cups without handles using as scoops.
4-601.11 Clean bottom of RI cooler/freezer. Reach in coolers/freezers have standing water and food debris. Take measures to clean spills as they occur. Repair condensation leak in make line cooler that contains raw fish and chicken at battering station.
4-202.16 Repair or replace chest freezer lids/reach in cooler drawers. Reach in cooler drawers at salad station will not close completely. Repair.
3-304.14 Store wet wiping cloths for sanitizing in quaternary ammonia solution at concentration specified by manufacturer. All wiping cloth solutions tested negative.

All food items in violation were voluntarily discarded.
