Discuss cooling procedures with Chef. Pork Butts are placed in walk in freezer to start the cooling process. Once cooled they are placed in paper bags and put into the walk in cooler.

Chef has changed cooling procedures. Pork roast are deboned and opened to cool in walk in freezer.
