3-501.16 Maintain potentially hazardous food at 135 F or above. Breaded chicken breast patties 124-140째F and hash rounds 97-120째F. Items were reheated 165 or above and placed on the line for service. 3-501.16(A)(1) Maintain PHF at 135 or above. PHF < 135F in hot holding unit due to faulty equipment (exception roasts at < 130F). Cease use of faulty equipment until repaired and verified by JCDH. Hot holding cabinet fluctuating between 135째F-108째F

4-901.11 Allow utensils to air dry before stacking. Employee drying equipment and utensils with cloth towel. Educated employee and manager about allow equipment and utensils to air dry and the possiblitiy of cross contamination with cloth towels. Employee was using a clean towel.

3-304.14 Store wet wiping cloths for sanitizing in 50 to 100 ppm chlorine.
5-501.113 Keep dumpster closed. Sliding panel door on dumpster open at the time of the inspection. 5-501.115 Clean the refuse storage area as often as necessary to maintain cleanliness. Accumulation of residue and debris inside of dumpster area.
