FSE has two ServSafe managers and does onsite training. One managers certification expired in Dec. 2011. He enrolled into the January ServSafe course taught at JCDH but it was cancelled and rescheduled for February 21 - 23. Manager stated that he attended class at JCDH on Feb 21, 2012, but he became ill and was unable to complete the 3 day course. He will try to reschedule or figure out how he may be able to finish up course and become certified again.

3-501.14(A) Cool PHF from 135F to 41F or lower within 6 hours, and from 135F to 70F or below within the first 2 hours of cooling time. PHF > 41F in cold holding unit due to improper cooling procedure following cooking.//Beans (4 pans) stored in WI cooler cooked at 11:30am today were 82 F - 128 F.//COS - beans were discarded.
