Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS Observation: The quaternary ammonium sanitizer is not being used according to EPA registered label use instructions and is at 500+ PPM. The auto dispensing unit for the quat sanitizer was dispensing concentrations that may be toxic to users.
Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration. Auto dispensing unit to be adjusted to dispense levels per manufacturer label instructions.

WAREWASHING MACHINES - AUTOMATIC DISPENSING OF DETERGENT AND SANITIZERS Observation: The warewashing machine does not dispense sanitizer automatically. Unit was tested several times and did not dispense chlorine sanitizer in any measurable concentration.
Correction: Repair or replace the warewashing machine. Warewashing machines shall automatically dispense detergents and sanitizers.
WAREWASHING MACHINES - AUTOMATIC DISPENSING OF DETERGENT AND SANITIZERS Observation: The warewashing machine does not dispense detergent or sanitizer automatically. The warewash machine was not dispensing the chlorine sanitizer when the unit was tested.
