    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment. Correct By: 02-Feb-2016

    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination. Eggs moved to bottom shelf and ground beef disposed of during inspection.

    Observation: Food thermometer not calibrated properly. Found thermometer to read 7 degrees higher than actual temperature.
    Correction: Food temperature measuring devices shall be calibrated to manufacturers specifications. Could not properly calibrate thermometer while on site. Thermometer to be replaced with an accurate stem thermometer.
  • FOOD CONTACT SURFACES - SOILED
    Observation: Multiple food contact surfaces are visibly soiled. Food prep surfaces on the steam table, prep cooler - 1 dr and 2 dr units.
    Correction: Maintain food contact surfaces in a clean condition.
  • HANDWASHING CLEANSER AVAILABILITY (corrected on site)
    Observation: Soap not available at food employee handwashing sink.
    Correction: Provide hand soap at handwashing sink to facilitate proper handwashing. Soap provided during inspection.
  • CERTIFIED FOOD MANAGER – REQUIREMENT
    Observation: There is no Wisconsin Certified Food Manager for this establishment.
    Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 90 days.
  • NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY
    Observation: The prep cooler sides and floor under the coolers are not cleaned on a frequent basis. The bottom shelf in both prep coolers are soiled as well. The kitchen area has multiple surfaces that are in need of regular cleaning frequency.
    Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
  • UTENSILS, EQUIPMENT AND LINENS - STORING PROHIBITIONS - SELF DRAINING POSITION
    Observation: Knives are improperly stored in the kitchen on the kitchen wall.
    Correction: Clean equiment and utensils shall be stored in a self-draining position to allow for air drying and covered or inverted.

    Observation: Current permit is not posted in establishment
    Correction: Post permit in public view. Current permit located during inspection and was posted.
