Type

  • Glove Use (Critical) (corrected)
    Gloves used incorrectly.
Correction: Gloves shall be used for only one task and used for no other purpose, and discarded when damaged, soiled or when interruptions occur in the operation.
Comments: 7/2/2014: DISCONTINUE USING SAME PAIR OF GLOVES FOR MULTIPLE TASKS. EMPLOYEE HANDLED HOT DOG BUN WITH GLOVES, THEN OPENED WALK-IN COOLER DOOR AND PLACED CHEESE SLICES FROM A CONTAINER ON THE HOT DOG WITH THE SAME PAIR OF GLOVES. GLOVES WERE CONTAMINATED ONCE WALK-IN COOLER DOOR WAS TOUCHED. CHEESE WAS THEN CONSIDERED CONTAMINATED ALSO. SUGGEST USING UTENSILS AND DELI PAPER WHERE POSSIBLE. SUGGEST TONGS USED FOR BBQ AND HOT DOG BUNS. GRAB BUN WITH TONGS, PLACE IN DELI PAPER OR CONTAINER, RUN TONGS ALONG SEAM OF BUN TO OPEN. THIS REMOVES THE NEED FOR GLOVES. SUGGEST UTENSIL BE USED TO ACCESS CHEESE SLICES, MINIMIZING HAND CONTACT.
  • No hand washing (when) (corrected)
Food employees’ hands became contaminated and were not washed to eliminate contamination.
Correction: Food employees shall wash their hands and exposed portions of their arms after contamination occurs.
Comments: 7/2/2014: HANDS MUST BE WASHED BEFORE PUTTING ON A NEW SET OF GLOVES, EACH AND EVERY TIME EVEN IF HANDS WERE JUST WASHED. MINIMIZE HAND WASHING BY LIMITING GLOVE CHANGES. SUGGEST A SMALL HAND SINK BE INSTALLED IN FRONT KITCHEN AREA FOR EASY ACCESS. DURING PEAK PERIODS, GLOVES ARE BEING CHANGED FREQUENTLY DUE TO EMPLOYEES HANDLING MONEY.
  • Restroom doors open (corrected)
Toilet room door(s) not kept closed.
Correction: Toilet room door(s) shall be kept closed, except during cleaning and maintenance.
Comments: 7/2/2014: KEEP DOOR TO TOILET ROOM CLOSED WHEN NOT IN USE.
    Location: Kitchen (back)
  • In use utensil storage (corrected)
    In use utensil(s) stored improperly.
Correction: During pauses in food preparation or dispensing, utensil(s) shall be stored in an approved manner.
Comments: 7/2/2014: DO NOT STORE KNIVES OR OTHER UTENSILS IN CONTAINERS OF STAGNANT WATER. SUGGEST DIPPER WELLS WITH RUNNING WATER BE INSTALLED. STAGNANT WATER BREADS BACTERIA AND IS NOT A SANITARY METHOD OF STORING UTENSILS.
