Comments: Pizza station prep top cooler: cheese within margin of error at 43, however pepperoni holding at 45 and pre-cooked sausage at 51. Several containers missing from prep top, leaving open spaces. Sausage was discarded and replaced immediately, and open spaces in prep top were covered. 30 minutes after covering, new sausage had maintained temp of 38 and acidic tomato sauce I was using as a "control" had already dropped from 52 to 50. Manager will ensure all spaces have containers in them in order to maintain temps. CORRECTED ON SITE.
