9/2/2011 | Critical Control Point 1 | COOLING- Shredded potatoes and mashed potatoes were improperly cooled. See temperature log below. Food on cart of placed in large containers with lids on. Boarder mix was cooked and placed on top of each other and after one hour was 133°F. Boarder mix was placed on racks and lids partially taken off. Shredded potatoes may have been placed in large container too quickly. Middle of potatoes was 42.9°F and sides were at 41°F. Please educate staff on cooling product in shallow pans and do not stack foods and leave lids off. Potentially hazardous foods shall be cooled rapidly from 135°F to 70°F within two hours and from 70°F to 41°F for a total time of six hours. Mashed potatoes were discarded. HOLDING- Foods were not holding at 41°F or below. Appears towel in pie case may be affecting temperature of pie on top of case. Waitress cooler below is at 41° but top is between 42°F-43.8°F. Maintain potentially hazardous foods cold at 41°F and below to prevent bacteria growth. |
