  • 3.0- Cheeses in upright cooler appeared to be moldy and unwholesome. Cheddar cheese had a sell by date of 1/20/12. These foods were discarded. Please check and rotate stock. Discussed not using a cardboard box for cheese storage. Cheese at bottom of box is not seen and not discarded as needed.
  • 4.1- Provide an accurate thermometer in the hot box to assure 135°F and above is being maintained.
2/8/2012Standard2DATE MARKING- Open feta cheese had a date mark of 1/9. Feta cheese appears to be a soft cheese which needs to be date marked and discarded within seven days. Discussed getting clarification from Ohio Department of Agriculture on final determination if feta is a soft cheese. Cheese was frozen until a response is given from ODA.
Digital long stem thermometers available for use.
Reportedly hamburgers and chicken patties are reheated in the steamer to 165°F.
  • 3.0- Cheese slices in the upright cooler had mold growth on the edges. Food shall be safe and wholesome. Cheese was discarded.
  • Note: Discussed traffic of unnecessary people in the kitchen (2.4 C2) It is the responsibilities of the person in charge to prevent traffic of unnecessary person in the kitchen. Teachers and/or organizations should not be using the coolers or kitchen equipment without supervision of a kitchen staff member.
9/7/2011Standard 1HOT HOLDING- Pretzel warmer used to hold potentially hazardous foods. Pretzel warmer is designated to only hold non potentially hazardous foods such as pretzels. Ambient air temperature is 104°F. Cheese sauce in case at 120°F.
Reportedly this is also used for breakfast foods. Maintain potentially hazardous foods hot at 135°F and above. Cheese sauce was discarded. Reportedly operation will no longer use pretzel warmer to hold foods.
DATE MARKING- Open roast beef from previous week had a date mark that was worn off. Clearly date mark foods when opened or prepared and consume within seven days. Roast beef was discarded.

  • 4.4- Gaskets on two door Beverage Air freezer and three door Beverage Air cooler are torn. Equipment shall be in good repair.
  • 4.5- Bottom of the one door salad cooler is rusty/soiled. Clean or refurbish this.
  • 5.1- Spray hose at the dishmachine is leaking. Repair this. Plumbing shall be in good repair.
2/9/2011Standard2DATE MARKING- Taco meat and broccoli soup were not date marked. Cooked chicken had a date mark of 1/27. Readyto- eat potentially hazardous foods shall be date marked when prepared and consumed within seven days. Chicken was discarded.

  • 4.4- Gaskets on the two door Beverage Air freezer and three door Beverage Air cooler are torn. Equipment shall be maintained in good repair.
  • 4.4- Cold case holding at 50°F. No foods were in the unit and unit was turned down holding 43°F on the coldest setting. Please monitor cooler so it maintains 41°F and below.
  • 3701-21-02- Current license not on site. Provide current food service license.
  • Dishmachine final rinse was not inspected at his time final rinse would not turn off and maintenance was working on unit.

No foods were being reheated during this inspection. Will evaluate reheating at next standard inspection. Food are currently not being reheated.
