Note: Non-commercial food processor is approved for performance basis. Currently this piece of equipment is used for one menu item. If the menu changes &/or OAC 3717 can not be maintained. It must be replaced with commercial grade equipment.
Operation added a Turbo Air 2-door reach-in with a flip lid, model number MST-48 with NSF label.
Currently operation is reheating sauces. Sauces are prepared a day prior, cooled under refrigeration and reheated on the stovetop to 165°F and above rapidly within 2 hours. The menu practices will be evaluated during the next standard inspection. If the operation continues to reheat foods in bulk more than one menu item a week the Risk Level will be changed to a Risk Level 4.

*3.4 Observed the wine jam cream cheese was dated 6/2/11. Foods shall be dated the day of preparation and shall be used or discarded in seven caleandar days.
*4.4 QAC sanitizer was at 100 ppm in the wiping cloth bucket. Maintain QAC sanitizer per manufacturers specifications.

5.1 Hand sink plumbing is in disrepair. Repair the hand sink, to promote proper hand washing. Use the hand sink in the adjoining kitchen area until repairs are completed.
Notes: Provide this office with a sign or approval from the fire department for the hood in the newly installed area.
Operation a non-commercial fod processor. Reportedly this piece of equipment is used for making basil vinegrette dressing only.
This piece of equipment is approved on a performance basis. The point in time the OAC 3717, can not be maintained or the menu expands this piece of equipment shall be replaced with commercial grade equipment.
Adjoining building added to this operation will reportedly be used for wine making equipment.

6.4 Repair the concrete gap in the middle of the newly installed floor and the hole from the pipe from the existing hand sink, to provide a cleanable surface.
Provide this office with a sign or approval from the fire department for the hood in the newly installed area.
Plan was provide today for the new area adjacent to the previous kitchen. This new area include a new grill, warming lamp/table, oven/stove top, and hand sink the remainder of the equipment was existing.
