4.4 Observed a torn door seal on the True upright cooler. Repair this in order to keep equipment in good repair.
-Observed proper chemical storage and labeling.
-2 accurate long stem thermometers available.
-Observed proper date marking of ready-to-eat, PHFs throughout.
-PHFs in the coolers were cold holding properly.
-Sausage gravy was hot holding properly in the warmer.
