Discussion:Next to 3 bay sink there is a plastic storage container containing roughly 40 pounds of raw pork. Operator states that it was put in container about 30 minutes earlier to season before cooking. Temperature of the pork measures 42 F. Suggested that the meat should be allowed season in the walk-in cooler if it is not going to be cooked right away. Pork was moved to roaster for cooking.
