Thermometer calibration was discussed and the dishwasher was working properly. The replacement of the laminate counter by the dishwashing and fryer area was discussed and must be completed immediately as it is part of a signed stipulation agreement to be repaired and the due date has since gone by.

Can was voluntarilly discarded. 2E: One of the operators food probe thermometers was off by 8 deg. F too high when calibrated in an ice water bath. Corrected, thermometer was adjusted to 32 deg. F and calibration procedures were reviewed.
