08/17/2015 | Inspection | Uncovered sliced tomatoes were observed stored in the top section of the deli style cooler not at or below 45 degrees F for the slices on the top. Per interview they were stored in refrigeration, sliced and stored in the top of the deli cooler 30 minutes prior To the temperature being measured. The temperature was re measured and found that it would cool in the appropriate amount of time. It is strongly recommended that the tomatoes get sliced and placed on a shallow sheet pan and cooled to 45 prior to being placed in the top of the deli cooler. |
