09/22/2015InspectionThe beef carpaccio (thinly sliced beef served raw) listed on the menu is without a consumer notification. Per interview, the wait staff notifies the customer at the time the product is ordered that it is a raw product. Consumer notification, must still be added to the menu. The menu was reviewed and had no products without a consumer notification. The dishwasher was operating properly at the time of inspection. The analog thermometer was calibrated at the time of inspection (a digital is recommended). Proper storage of clam tags and not separating out portions of clams for storage (only for service or prep.) was discussed.
