08/08/2015 | Inspection | Cooked chicken and ribs hot held in bar area, in steno chaffing dish measured 165 degrees. Raw chicken that was thawing on counter for 20 minutes measured 35 degrees using DOH thermapen. Raw chicken was then cut up and placed in refrigeration unit that measured 36 degrees. Dinner sides of cold slaw and potato salad measured within acceptable range using DOH thermapen. Both bar refrigerator units measured 40 degrees. These units were storing drinks for bar. Walk-in cooler storing beer kegs measured 38 degrees. One zip locked bag of frozen raw chicken was observed stored in a cooler of raw chicken juice, located in walk-in refrigerator. The bag was removed from cooler and chicken was placed in another storage container. Cooler was set aside to be washed, rinsed, and sanitized before used again. Per interview with operator, all left over cooked food is voluntarily discarded. Cooking times for chicken and ribs are staggered to reduce the amount of cooked product that will need to be hot held for dinner service. |

02/18/2015 | Inspection | reviewed thermometer calibration. cooling of soups and ribs in large quantities must be cooled in walkin cooler. cooling logs and information on cooling was discussed. please complete the cooling log for all products being cooled and keep on file to present to the DOH inspector. new menu has not been finalized. Please provide it to our office once completed. |

12/12/2014 | Inspection | test strips are on site and sanitizer solution at 100ppm. cleaning and sanitizing the food contact portions of the air fryer were discussed. soups are not being made at this time. |
