Discussed menu with operator. Operator stated that hot dogs and meat sauce are no longer on the menu. Discussed regular cleaning of ice machine and fan cover in walk-in.

Discussed with owner by phone on 6/9/14 that facility will no longer cool meat sauce.

Also discussed storing wet wiping clothes in sanitizer solution. Discussed storage of food items or items that will contact food up off the floor. Discussed storing raw frozen hamburger patties in freezer in kitchen. Discussed process for making meat sauce. Discussed avoiding barehand contact with ready-to-eat foods, including lemons/limes used to garnish drinks. Discussed handwashing and ill worker policy with operator. TTOC for above items, except walk-in refrigerator walls, is 6/3/14. Call CCHD (737-2019) to establish TTOC for walk-in refrigerator walls.
