The food facility operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation.

Food was held at 53.3 to 59.7 degrees F rather than 41 degrees F or below as required. Refrigeation unit in prep area containing chicken/shrimp/vegetable products observed at temperature in excess of 41F. Chicken/shrimp was removed.

Food was held at 47.8 to 63.2 degrees F rather than 41 degrees F or below as required. Refrigeation unit in prep area containing fish products observed at temperature in excess of 41F. Products held for less than four hours were transferred to other cooling unit.
