    Frozen condensation is building up on ceiling in deli walk in freezer and around door. Frozen condensation is also building up on ceiling behind freezer unit in bakery walk in freezer. Bread cart covered in plastic was stored below where condensation was dripping. Cart was moved.
  • Chemical Sanitization for Mechanical or Manual Warewashing Equipment (46.674(d))
    Sanitizer concentration of quatinary ammonia in bakery three basin sink was at 50 ppm rather than 200 ppm. Hot water was turned down to faucet and new sanitizer water was put in sink. Concentration was then at 200 ppm.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    Black residue on fan guards in milk walk in cooler and in overhead air curtain vents in some of the open customer self service cases (juice case and cold cases at end of isles).
