- 229.164 (e) (1) (D) (ii)Bare hand documentation. Observed an employee making pizza with out a physical barrier such as a glove or utensil and did not see evidence of bare hand contact documentation. Provide documentation that handling of ready-to-eat foods with bare hands is accomplished using two or more of the following safeguards: double hand washing, nail brushes, a hand sanitizer, incentive programs for sick employees not to work, or control measures approved by the regulatory authority. Provide documentation of actions taken when training is not provided or employees do not follow appropriate hand washing policy.
- Several dead roaches were seen behind the water heater in the back area near the 3 compartment sink. Throughly clean the area where roaches were seen to minimize presence of roaches.
- Establishment did not food manager present during the time of the inspection. A food manager should be present at all times during food preparation.
- Mop sink is currently not in operation. A waste water sink should be supplied and operating during business hours
