SEVERAL POTENTIALLY HAZARDOUS FOOD PRODUCTS BEING HELD IN HOT HOLD UNITS WERE BELOW REQUIRED HOT HOLD TEMPERATURES. INSPECTOR WAS GAURANTEED THAT ITEMS HAD NOT BEEN ON HOT HOLD LINE FOR OVER 30 MINS. ITEMS DID LOOK FRESHLY MADE. ITEMS WERE REMOVED AND REHEATED. COVERS/LIDS RECOMMENDED SO AS TO RETAIN HEAT OVER PRODUCTS.

BASED ON FACT THAT MOST HAND WASHING SINKS IN MEAT MARKET AND IN TAQUERIA WERE NOT FULLY FUNCTIONAL AND/OR MISSING HAND SOAP/PAPER TOWELS/HAD HOT WATER SUPPLY TURNED OFF AT CUT OFF VALVE.
