  • 229.165 (g) (2) (E)2 comp sink. Observed third compartment of 3 compartment sink being used as a dump sink. The other two compartments contained soapy water and sanitizing solutions. Instructed manager and bartender that the wash, rinse, sanitize method must be used on all dishware. Use 3 compartment sink for proper manual ware washing.

  • 229.164 (f) (2) (A) (iii) cleaning / sanitizing. Ice machine has build up of slime and mold on lip that allows ice to drop into bin once made. Soda nozzle holsters must be free and clean of mold and slime. Soda nozzle hose must be kept out of ice as well as half-n-half must be kept out of ice used for customer consumption. One ice bin has been designated for storage of juices, half-n-half, cut limes, etc.
  • 229.164 (o) (7) (A) consume by date (prepared). Refrigerated, ready-to-eat food not properly marked with a use by date. Onions and relish in food grade containers without being date labelled.
  • 229.167 (p) (11) (C)insects/pests not minimized. Evidence of insects observed. Adult roach and baby roaches observed under bar in front and drain flies found in back corner along with standing water. Gave owner 72 hours to clean all areas beneath bar to remove buildup of food, moisture and debris and provide proof of pest control.

  • Ensure all potenitally hazardous items are held at 41 F or below. Mayonnaise and veggie juice were at 47F
  • 229.166 (i) (1) (B) HWS improper use. Ensure all cleaning chemicals are not stored in handwashing sink.
  • Ice used as coolant may not be used an ingredient or food. (Ensure ice use to cool down soda coils and pipes is not used for consumption).
  • Follow proper ware washing procedures. Wash (soap and water), Rinse (Clean water), Sanitize. Items must then be air dried before use. Employee did not rinse or air dry pizza slicer.
  • One person per shift must be Food Manager Certified. (IAW the COSA Municipal COde Chapter #13) during the establishments hours of operation a Certified Food Manager with a valid Health Department ID, both must be present. Once a valid Food Managers Certificate is obtained, proceed to 1901 S. Alamo (HEalth Dept Desk) with certificate to pruchase ($15.45) a Metro HEalth ID/certificate.

  • Follow proper ware washing procedure: wash - rinse - sanitize - air dry.
  • Clean and sanitize the soda guns and holsters daily. Clean and sanitize inside the ice machine.
  • Install the missing drain pipe for one of the soda gun holsters.
