INSPECTOR WITNESSED FOOD SERVICE EMPLOYEE FAIL TO PROPERLY FOLLOW DOUBLE-HAND WASHING PROCEDURE, AS REQUIRED BY TFER AND CITY OF S.A. FOOD CODE,PRIOR TO ENGAGING IN THE PREPARATION OF BURGERS. INSPECTOR WITNESSED SAID EMPLOYEE WASH HANDS AND EXPOSED PROTIONS OF ARMS ONLY ONE TIME BEFORE RETURNING TO THE HANDLING OF POTENTIALLY HAZARDOUS FOOD PRODUCTS (BEEF PATTIES, TOMATOES, LETTUCE, ONIONS, HAMBURGER BUNS) MANAGER ON DUTY EXPLAINED TO INSPECTOR THAT THE POLICY FOLLOWED DOES REQUIRE DOUBLE HAND WASHING OR THE WEARING OF SINGLE SERVICE GLOVES WHEN ENGAGING IN THE PREPARATION OF FOODS. EMPLOYEES ARE TO STORE ALL PERSONAL ITEMS IN DESIGNATED AREA THAT IS AWAY FROM ALL FOOD PREPARATION/FOOD SERVICE AREAS INCLUDING SHELVING THAT IS USED TO STORE FOOD CONDIMENTS, CLEAN LINEN, FOOD SERVICE CONTAINERS, ETC. INSPECTOR FOUND PERSONAL CELLULAR PHONE, KEYS ON KEY RING, AND WALLET BEING STORED ON SHELVING WHERE FOOD CONTAINERS WERE BEING STORE. 229.164 (f) (2) (A) (i) (II) separation raw/cooked. Food not protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food. 229.164 (f) (2) (A) (i) (I) separation of raw/ RTE. Food not protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as vegetables. AT TIME OF INSPECTION, INSIDE THE WALK-IN COOLER, INSPECTOR FOUND RAW SHELLED EGGS BEING STORED ON TOP SHELVE ABOVE READY TO EAT FOODS (CHEESE, PREPARED/PLATED SALADS) AND RAW READY TO EAT FOODS (VEGETABLES) SEPERATION OF FOODS REQUIRED SO AS TO ELIMINATE THE POTENTIAL FOR CROSS CONTAMINATION. 229.167 (p) (11) (C)insects/pests not minimized. The presence of insects, rodents, and other pests shall be controlled to minimize their presence within the physical facility and its contents, and on the contiguous land or property under the control of the permit holder by using methods, if pests are found, such as trapping devices or other means of pest control as specified (in this code). AT TIME OF INSPECTION, INSPECTOR WITNESSED ANTS ON WALL IMMEDIATELY ADJACENT TO FOOD PREPARATION COUNTER/SHELVE USED FOR THE HOT-HOLD GRAVY UTENSILS AND FOOD PACKAGING CONTAINERS. Eliminate the presence of insects by using any approved means. 229.165 (r) (3) (D)no sanitization. AT TIME OF INSPECTION, NO SANITIZATION CONTAINERS WERE PRESENT NOR BEING UTILIZED AT FOOD PREPARATION COUNTERS. INSPECTOR WITNESSED FOOD PREPARATION EMPLOYEE USE SOILED RAG/TOWEL TO WIPE DOWN COUNTER. NO SANTIATION SOLUTION PRESENT AND RAG/TOWEL WAS NOT DISPOSED OF BUT USED REPEATEDLY. ESTABLISHMENT MANAGER STATED THAT SANITATION BUCKETS WERE NOT BEING USED BECAUSE SAID BUCKETS WERE NOT BEING PROPERLY CLEANED. THE USE OF SANITATION BUCKETS/CONTAINERS, WITH THE REQUIRED P.H.
