- Observed two thermometers at 28 F in ice bath. Thermometers should be 32 F in ice bath. Ensure thermometers are routinely calibrated.
- Observed debris accumulation on ceilings throughout kitchen especially around vents as discussed with staff during the inspection. Clean and ensure routine cleaning.
- Facility does not have any Illinois certified FSSMC. Discussed with management how to contact IDPH for reciprocity for their approved food safety courses. Per magament, Brad Aberle sent in for his Illinois license in June and has not yet received his license. I recommended that he contact IDPH.

- Observed cracked coving in walk in cooler in cheese shop area. Repair or replace. Observed gasket on the deli freezer door in disrepair. Per manager Kathryn, there is a standing work order for the gasket to be repaired.
- Observed missing ceiling tile in storage area next to cheese room. Repair or replace.
- Observed cleaning chemical spray bottle on shelf next to food items. Ensure chemicals are stored physically separate and/or below food items.

- Observed broken door seal gasket to the walk-in cooler in the cheese prep area. Replace gasket. Also, observed broken door frame at the bottom of the walk-in cooler in the cheese prep area. Repair frame.
- No sanitizer concentration indicated in the sanitizer bucket. Provide proper sanitizer solution concentration.
- Wash, rinse and sanitize the following: All the mobile plastic carts and the mobile metal racks in the deli/bakery, observed food debris build-up; the 4-door stationary black plastic storage drawers in the bakery, observed food debris build-up.
- Observed metal containers stacked together still wet on the storage racks. Allow items to air dry.
- Observed damaged floor/wall tile in the walk-way to the cheese room prep area and inside the walk-in cooler in the same prep area. Replaced cracked tile. Also, observed sealing caulk coming apart along the floor/wall tile juncture in the deli area. Caulk/seal gaps.
- Observed food debris on floor/wall corners under equipment and grease build-up behind the fryers/ovens on the floor. Clean.
