Observed frequent hand washing, use of gloves and sanitizer test kit. Remember to clean can opener regularly, invert paper plated to prevent contamination, and to ensure that potentially hazardous food are stored correctly.

Violation: 2350 ii - Hand sink observed with a leak. Repair plumbing.
Comments:
Sanitizer at three bay = 200pppm (quat) Sanitizer bucket 100ppm. (Cl-) Hang permit where the public can view it. It is currently handing on the inside of the door. Observed frequent handwashing, sanitizer test kit, and gloves in use. Discussed employee health policy, cooling procedures, and cleaning frequency of ice machine. Note: ~50% of food outbreaks are viral and your three best defenses against viral outbreaks are: an established employee health policy, frequent and proper handwashing, and no bare hand contact with ready to eat foods.

Comments:
Complaint Inspection: A) Dishes not being cleaned properly, not using detergent. B) Alarm on dishwasher has been disabled C) Staff eating on paper plates due to dishes not being cleaned properly. Inspection: A) Establishment has a chemical sanitizing dishwasher, but they are out of detergent. Dishes have been washed in 3-bay and then placed in dishwasher. Dishwasher today reached 167.9F however, the chlorine test strips revealed that the sanitizer is not being dispensed (Jan 4, 2007 - chlorine in dishwasher was 50ppm) Facility was instructed to use 3-bay with chlorine and test strips to ensure proper chlorine concentration. B) Establishment has until March 2007 to have an alarm installed indicating when sanitizer is no longer being dispensed. C) During recent outbreak establishment purchased and used styrofoam plates. Staff usually uses non-disposable cups and plates. Suggest keeping a log for sanitizer concentration in dishwasher. Call once dishwasher is fixed.

1320 - Corrected During Inspection There was no temperature measuring device located in the McCalls. Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
1770 C - Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: Ice Maker. Maintain nonfood-contact surfaces of equipment clean.
Comments:
Refrigerator: McCall's Unit: temperature changed from 40-50°F with frequent opening of the doors. Have unit serviced/cleaned to maintain 41°F at all times. An internal thermometer was added to this unit today. ***Milk: Residents are being served in their rooms due to illnesses. The milk was out for breakfast (~1/2 hour) and then placed back in the refrigerator. Logs: Received a copy of food and equipment temperature logs. See file Dishwasher: At present, establishment is out of detergent. Items are being washed in 3-bay and sanitized in mechanical dishwasher. Log is kept on temperature of dishwasher, suggest keeping a log on sanitizer concentration (50ppm today) An audible/visual alarm needs to be added to chemical sanitizing dishwasher by March 2007 (see 12 VAC 5-421-1370) Notes: Facility was organized and in good order at time of inspection. Observed the use of gloves and frequent hand washing.

0470 - Critical Whole raw eggs stored over ready-to-eat (RTE) food in the refrigeration unit. Separate raw animal foods during storage, preparation, holding, and display from raw RTE food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
0830 - Critical The prepared ready-to-eat (RTE) @FOOD@ in the refrigeration unit is not properly dated for disposition. Mark the name and ""consume by"" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41F or below the food shall be served or sold within 7 calendar days or within 4 calendar days if held at 45F. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
