All equipment must be stored at least six inches off the ground and protected. Please contact the health department when repaired. A follow up inspection will be conducted to ensure compliance that all violations are corrected.

Purpose of inspection is to check faucet on handsink. Operator said faucet handle was ordered yesterday. Will be here in 1 week to 10 days. He said that it took awhile to find it. There is an event tonight in the facility. In the meantime, advised to set up one compartment of 3 compartment sink for handwash only. Advised to stock with soap and towels. This was done. If not using dishmachine, carry all soiled equipment and utensils to Sand Dollar for cleaning, until hand sink is repaired. Do not use 3 compartment sink here for this until handsink is in operation. Two 83 pound steamship rounds are out at room temperature. These are for service tonight at 6:30. Operator said they are to be warmed up and sliced. Advised must keep at or above 140 degrees F or below 45 degrees F. Do not keep out at room temperature. Operator put in holding cabinet. Since there is no thermometer in hot holding unit, advised to monitor product temperatures through the day on these roasts to be sure they are held no lower than 140 degrees F. Recommend keeping written log. Temperature log begun. Ecolab here at time of inspection, conducting routine inspection of dishmachine.
JANUARY 7,2004 FOLLOW-UP INSPECTION: Hand sink has hot and cold running water. Has been repaired.

This kitchen is used on occasional basis, with food prepared in main kitchen and transported to this kitchen. General cleaning needed before next use. Be sure hand sink is stocked with soap before next use. Hand sink cannot be properly used since there is no faucet on cold water faucet. This is a repeat violation and correction is required prior to next event. Please call when this is fixed for follow-up inspection next week. Mechanical dishmachine would not reach sufficient hot water temperature, ran for 45 minutes during inspection after having not been used for days. (May need additional heat up time?) Operator will ensure that it reaches proper temperatures before using. Please call when assured of this.
