Monitor high temperature dishmachine to insure proper sanitizing temperatures.

Fruit was being taken out of the bowl with hands and common cup. When leaving also noted employees eating food out of a take out container box. If employees are eating they must be on beak away from food storage, preparation areas.

1)Store all oven racks and equipment at least 6 inches above the floor 2) Hood filters need cleaning 3)Clean top of stove and top of grill 4) clean the floor below the cookline &below heavy equipment 5)Clean the wall tiles below the charcoal grill 6) A large frozen cone of condensate was observed on walk-in freezer floor, Manager has agreed to determine if walk-in freezer has a defrost problem (or if this was a previously fixed problem that employees did not properly clean-up prior to closing kitchen) 7) Repair the door gasket to ice machine 8) clean around rim of ice chute inside large ice machine 9) Ensure all floor drains have covers and that the drain pans in them have been cleaned 10) Repair the wall above the pot wash area. Violations discussed. No critical violations observed. Permit Issued for Summer Opening.
