Per owner / CFM will put into upright ref, to cool advised the owner CFM that hot / warm product ( especially thick masses like the products observed ) are to be placed into 2 inch thick masses and placed uncovered in upright ref, to cool ---suggested use of the upright freezer ( that has plenty of space ) to put the product in for about an hour to cool even more rapidly .Also advised the owner that multiple ( about 6 or 8 ) shallow washable containers needs to be purchased to facilitate cooling of warm // hot masses
