Comments:
Visited facility in response to customer complaint that on 3/12/07 about 9:30 am customer observed female employee handling frozen hamburger patties with bare hands then went to hot food area to serve complainant; when customer asked the food handler to wash hands, customer was told this was unnecessary as gloves were being put on; customer also observed tongs used to pry apart the frozen burgers and was unsure if the same tongs were used to serve RTE foods. Spoke with deli crew trainer who stated she was the person on duty when customer complained. Discussion revealed that it was a practice to wear a glove handling raw foods then to change the glove to a new gloves to handle cooked foods. I notified trainer of Health Department regulations that hands shall be washed before putting on gloves. Cover this regulation with all food handlers and emphasize handwashing.
