    Observation: Kitchen ceiling has flaking paint - not maintained in good repair
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

-Fryers have moved beyond the cover of the hood and may not be protected by the fire suppression system. Address this issue and report back to the health department. May need to consult the fire marshal or building department.
-Some floor repairs needed. Several holes and damage observed.
  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Food cold holding at improper temperatures in the 3 door Continental refrigerator.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Warewashing Equipment, Cleaning Agents
    Observation: The dish machine observed without detergent for the wash cycle. Staff pre-washing then placing dishes in the machine to rinse and sanitize.
    Correction: Maintain chemical products for the dish machine to operate cotrrectly.
  • Lighting, Intensity
    Observation: Less than 10 foot candles of light was noted in the dry storage.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.
