Food in the Continental refrigerator that could be saved was placed in other cold holding units. Some food had to be discarded. This commercial piece of equipment should recover quickly as designed and cold hold food at 41 degrees or below even during heavy use.

| - The ice machine bin needs cleaned and sanitized. Some build-up of debris on the upper plastic shield on the interior of the bin. - Some ice build-up in the Walk-in freezer. Sounds like it could be causing a noise in one of the fans. Maintenance may want to look at it to prevent any damage to the unit. - Be sure staff that unbox cans and puts dry stock away know to separate out all dented cans. | The kitchen manager, Wanda Hurst, asked me to revisit to discuss the location of the hand sink needed near the dish room. The area she designated, right outside the dish room on a shared wall between the dish room and the prep area meets for compliance of the violation issued during the last inspection.
