Adjust unit to maintain all food at 135 degrees or above and use time as a control (label with time set on it, discard after 4 hours).
Comments:
Notes: wares at 3 part sink are rinsed after sanitizing-wares should be washed, rinsed, then sanitized last. All foods in cooler are date labeled except deli meat. Front door propped open-flies in kitchen. Thaw frozen food (crab) under running water. Spice containers by ice machine stored on the floor. Excellent glove changing and handwashing. Chlorine at 50 ppm.
