After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. All items must be washed, rinsed, and sanitized.
Comments:
Correct the above item today. Chlorine sanitizer needs to be 50 - 100 ppm. Monitor food temperatures and sanitizer concentration thru out the day. Employees were changing gloves in between tasks.

Violation: 3020 - Soap was not provided at the hand washing lavatory in the in back. There was soap by the 3 vat sink, but there needs to be hand soap at the hand sink. Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
Comments:
Correct the above item before opening tomorrow. All food temperatures were within the acceptable range. Employee was observed with a hair restraint and gloves while handling food items.
