Person in charge knowledgeable about food safety and answered questions correctly regarding cook temperatures, cold holding, hot holding, and employee health. Proper date marking of ready to eat foods. Very clean and organized kitchen. Three compartment sink setup sanitizing properly. Temperature logs are also being kept on all units, additionally all boxes are being upgraded to have electronic temperature monitoring logs. Excellent cold holding temperatures. Employees were observed wearing and changing hairnets, gloves, and washing their hands when necessary. Keep up the great work! Discussion on new food code update. | A pre-opening and final inspection was conducted for the newly remodel cafeteria/kitchen serving room/line/areas: 1. No violations observed. 2. Very nicely constructed area with adequate equipment in place. 3. All stainless steel construction observed with all joints between metal and walls sealed with proper calking. 4. All surfaces smooth and cleanable. 5. Lighting measurement made on serving counter were adequate with at lease 20 foot candles intensity. However, additional lighting will be added to customer side to increase the light intensity. 6. Pass through cold and hot Victory units were relocated and are functioning adequately with adequate connections for proper maintenance. 7. Steam and cold holding serving units relocated and have adequate connections for proper cleaning and maintenance. Floor sink available under units for adequate draining and cleaning. 8. Cold hold unit temperature was adequate at 41 degrees. This area/room/equipment meets the requirements of the Virginia Food Regulations for permitting by the Department of Health.
