  • DISCONTINUE USING SINGLE USE CONTAINERS (EG. COTTAGE CHEESE CONTAINER USED FOR STORAGE OF LEFTOVER MASHED POTATOS, ETC.) FOR RE-USE. RE-USE CONTAINERS MUST BE NSF APPROVED.
  • DISCONTINUE WASH-RINSE-SANITIZING EQUIPMENT AND/OR UTENSILS IN TWO COMPARTMENT FOOD PREP SINK. THIS SINK WHOULD BE FOR FOOD PREP ONLY. USE THREE COMP SINK FOR DISHWASHING UNTIL DISH MACHINE IS REPAIRED. CHLORINE OR QUAT SANITIZER CAN BE USED.
  • HANG MOPS IN MOP SINK ROOM TO DRY AFTER EACH USE. OBSERVED WET MOP IN SINK DURING INSPECTION.
  • OBSERVED FOOD EMPLOYEE WITH PAINTED FINGERNAILS DURING INSPECTION. FINGERNAILS MUST BE FREE OF NAIL POLISH AND TRIMMED/FILED.
  • ONCE RECEIVED, POST COPY OF STATE OF MN FOOD MANAGER CERTIFICATE.
  • PROVIDE APPROVED BACKFLOW PREVENTER WITH PRESSURE BLEEDING DEVICE FOR MOP SINK. DIAGRAM SENT TO JOEL W. VIA E-MAIL.
  • PROVIDE APPROVED EMPLOYEE BEVERAGE CONTAINER IN KITCHEN AREA. OBSERVED OPEN CANNED BEVERAGE CONTAINER DURING INSPECTION. PROVIDE SECURE LID AND STRAW ON EMPLOYEE BEVERAGE CONTAINERS TO BE APPROVED.

  • PROVIDE FINGERNAIL BRUSH FOR KITCHEN HANDWASHING SINK. NO BRUSH OBSERVED DURING INSPECTION.
  • PROVIDE HAIR RESTRAINT (IE. HAIR NET, HAT, ETC.) FOR ALL FOOD EMPLOYEES. NO HAIR RESTRAINT OBSERVED FOR FOOD EMPLOYEE DURING BEGINNING OF INSPECTION.
  • PROVIDE LABEL ON ALL CONTAINERS OF FOOD, INCLUDING DRY INGREDIENTS AND FOOD CONTAINERS WITHIN REACH IN REFRIGERATION UNITS. OBSERVED MULTIPLE CONTAINERS WITH NO LABEL.
  • PROVIDE QUAT AND CHLORINE SANITIZING TEST STRIPS. QUAT CONCENTRATION SHOULD BE 200-400 PPM AND CHLORINE CONCENTRATION SHOULD BE 50-200 PPM.
