  • CLEAN AND MAINTAIN OUTSIDE OF CONTAINER IN CLEAN STORAGE AREA. OBSERVED DIRTY OUTSIDE OF FOOD CONTAINER IN CLEAN STORAGE AREA NEAR PIZZA PREP LINE.
  • CLEAN AND MAINTAIN WALK IN REFRIGERATOR FAN SHIELD.
  • CLEAN AND MAINTAIN WALL MOUNTED DRYING RACKS ON CLEAN SIDE OF DISH MACHINE.
  • CLEAN AND MAINTAINE CEILING GRATE NEAR OUTSIDE OF WALK IN REFRIGERATION ENTRANCE.
  • DISCONTINUE PROPPING OPEN REAR DOOR. OBSERVED DOOR PROPPED OPEN AT BEGINNING OF INSPECTION.
  • DISCONTINUE STACKING WET EQUIPMENT ON CLEAN STORAGE RACKS. ALLOW EQUIPMENT TO AIR DRY ON DRYING RACKS PRIOR TO STACKING. OBSERVED WET FOOD CONTAINERS IN CLEAN STORAGE AREA.
  • DISCONTINUE STORING TOXIC CHEMICALS (GLASS CLEANER) ON SPLASHGUARD ABOVE FOOD PREP SINK. CHEMICALS SHOULD BE STORED WITH OTHER CLEANERS NEAR MOP SINK AREA.
  • HANG MOPS TO AIR DRY AFTER EACH USE. OBSERVED WET MOP IN MOP SINK DURING INSPECTION.
  • OBSERVED 0 PPM CHLORINE DURING BEGINNING OF INSPECTION AND 100 PPM DURING END OF INSPECTION.
  • OBSERVED DISHWASHING EMPLOYEE HANDLE DIRTY DISHES, THEN CLEAN DISHES WITHOUT WASHING HANDS BETWEEN TASKS.
  • PROVIDE SILICONE SEAL WHERE MISSING BETWEEN KITCHEN HAND SINK AND SPLASHGUARDS.
  • REPAIR BOTTOM SEAL OF WALK IN REFRIGERATION DOOR. SEAL IS DAMAGED.
