  • BROWN PALLETS IN WALK-IN COOLER ARE NOT APPROVED (NON-NSF; LESS THAN 6" CLEARANCE). REPLACEMENTS MUST BY NSF APPROVED AND HAVE 6" MIN. CLEARANCE TO FLOOR
  • HOOD PANELS WITH HANDLES WERE OUT OF HOOD ABOVE FRYERS DUE TO "EXCESS SMOKE IN THE AIR". ADJUST SYSTEM TO PROVIDE CLEAN AIR AND TO KEEP GREASE FROM BYPASSING INTENDED FILTER SYSTEM. HIGHER VELOCITY MAY BE NEEDED.
  • POST NO SMOKING SIGNS AT BOTH ENTRANCE DOORS.
  • PUT UP THE POSTER I LEFT, OR EQUIVALENT ONE.
  • SANITIZER IN SINK AND IN SPRAY BOTTLES WAS ONLY 100 PPM QUAT. RAISE TO 200-400 PPM. SANITIZER IN PAIL WAS ABOUT 600 PPM QUAT. LOWER TO 200-400 PPM QUAT.
