Observed the drink dispenser and salsa bar off the mobile unit at time of the inspection. All operating equipment that is not a days worth of storage must be integral to the mobile unit.

Observed the handwashing sink not being used at time of the inspection. A Temporary handwashing sink was setup however a catch bucket was not provided. Food was already being prepared at this time. The handwashing sink must always be setup first.
- Information: Cold Food Temperatures. Temperature of 41°F(5°C) or colder is required. Based on thermometer accuracy, two degrees F or one degree C tolerance is given.
Salsa Bar: 38 F
- Information: Hot Food Temperatures 135°F or (59°C) or warmer required. Two degrees, 2°F (1°C), of tolerance is given based on thermometer accuracy.

Observed an employee beverage with a screw top lid in the food prep area. Ensure all employee beverages have a lid and a straw or a lid and a handle.

CORRECTION: Handwashing sink was plugged in during the inspection. And soap was provided. The facility was using a temporary handwashing sink provided off the mobile at time of the inspection.
