Complaint re: hot water in toilet rooms is too hot
On site visit-spoke with manager. The ladies room hot water noted at 176f and men's room was at 171f. JR plumbing has been called.
1. A handwash lavatory shall be equipped to provide water at least 85f and no more than 110f through a mixing valave or combination faucet.
Manager will fax corrections.

Follow up of hot water
1. Hot water heater has been repaired but water was still hot in AM but the plumber returned and installed a mixing valve and water is now
110f at handwash sinks in the toilet rooms.

The employee handwash sink by the drive thru and 3 compartment sink need to be cleaned daily before they are used since have a build of
grease and food waste.
Violation 47 A**: 4-601.11 Equipment, Nonfood-Contact Surfaces
(C) NonFOOD-CONTACT SURFACES of EQUIPMENT shall be kept free of an accumulation of
dust, dirt, FOOD residue, and other debris.
The floors behind and the fryers, heating cabinets, 3 compartment sink need to be cleaned. There is food waste, grease, and other
materials present. Clean the grout of floor in the food prep area since there some food waste found here. Clean dust on walls in grill area.
Violation 53 R: 6-501.12 Cleaning, Frequency and Restrictions.
(A) The PHYSICAL FACILITIES shall be cleaned as often as necessary to keep them clean.
(B) Cleaning shall be done during periods when the least amount of FOOD is exposed such
as after closing. This requirement does not apply to cleaning that is necessary due to a
spill or other accident.

Two employee handwash sinks. Overhead spray and 3 compartment sink with power washer. Food prep sink and mop sink present.
The following temperatures were taken:
Fried beans: 177 f taco meat: 207 f & 166 f chicken: 137 f single door freezer: 3 f
2 door cooler: 39 f & 32 f Traulsen reach in cooler: 8 f cheese: 38 f & 37 f

Our Department received a complaint from a customer who states that he and a friend ate soft chicken tacos and cheese potatoes at this
establishment on 8-28-09 and became sick with diarrhea and vomiting. Complainant states that they shared no other restaurant meals for 72
hours prior to eating at this establishment. He also states that the tacos had an off taste.

At the time of this inspection, our Department has received no other complaints.
Discussed the complaint with the manager on duty.
* She reports no sick food workers during the time period in question.
* The establishment has a written sick policy that all employees sign off on during orientation.
* During this visit, I observed good hand washing and glove use by food workers.
* The chicken, lettuce and cheese used in the tacos is prepared at a central commissary. Chicken is delivered to the restaurant frozen. Thawed
in the walk-in, heated and served.
Temperatures recorded during this visit:
Chicken was delivered frozen during the visit.
Chicken was heated to 180f.
Chicken on line was 151f & 166f
Cheese on line was 38f
Cheese sauce for potatoes was - 145f plus
Food stored in the walk-in was 37f
Food stored in the freezer was [7f]

4-compartment sink with power wash. I recorded 200ppm of Kayquat sanitizer in the final rinse.

I observed excellent hand washing and glove use by employees.
No violations noted during this inspection.
