Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS Observation: The dish machine sanitizer is not being used according to EPA registered label use instructions and is at <10 PPM. Additional bleach was added to the bottle and sanitizer line was primed and still no sanitizer was detected.
Correction: Provide training to employees on proper use and concentration of sanitizer. Repair dish washer to provide proper sanitizer concentration.
Have Repairman call once unit is serviced. Bar will sanitize all dishes in the bar sinks until the unit is repaired.

Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS Observation: There are containers of ready-to-eat foods stored next to packages of raw meats in reachin cooler.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables or increase the space between items. Suggest keeping raw meat in a metal or plastic container to keep seperate.
FOOD TEMPERATURE MEASURING DEVICES - SMALL DIAMETER PROBE Observation: No thermometer is present for monitoring temperatures in thin mass foods.
Correction: Find or replace digital thermometer.
HAND DRYING PROVISION (corrected on site) Observation: There was no paper toweling at the bar handwashing sink at start of the inspection.
Correction: The paper towels were restocked during inspection. Suggest adding a paper towel dispensor for the paper towels. Also suggest adding a soap dispensor to kitchen handwash especially for peak service times.
